Kofta Curry

INGREDIENTS
Kofta
- 1 lb ground beef
- 1/2 cup diced onions
- 2 cloves of garlic minced
- 1/2 tbs grated ginger
- 1/4 cup chopped cilantro
- 1 tsp garam masala
- 1/4 cup breadcrumbs
- 1 egg
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp paprika
- 1 tsp salt
Curry
- 2 bay leaves
- 1 cinnamon stick
- 2 cardamom seeds
- 1 cup chopped onion
- 4 cloves garlic minced
- 1 tbs grated ginger
- 1 tsp garam masala
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- 1 tsp spicy paprica
- 2 beefsteak tomatoes
- 1 cup water
- salt to taste
- cilantro to garnis
STEPS
- Mix all the kofta ingredients together in a bowl. Form into equal size balls.
- Heat a dutch oven with 3 tablespoon of oil. Working in batches, brown all sides of the meatballs. Don’t crowd your pot. Set aside.
- Use the same pot, add bay leaves, cinnamon and cardamoms. Cook for 1 min.
- Add onions, garlic and ginger. Season with 1 tsp salt and cook until translucent.
- Add garam masala. cumin, coriander, turmeric and paprika. Let cook for 2 mins.
- Mix in tomatoes. Cover and lower heat to medium. Let simmer for 20 mins until tomatoes are soft. Stir every 5 mins.
- Add 1 cup of water, season with salt and then add meatballs.
- Let everything cook together uncovered for another 20 mins.
- Garnish with cilantro. Enjoy served with rice or naan.
